Raita/Chutney

Green Chutney Sweet & Sour Chutney Nut Chutney Cucumber Raita Chat Chutney
Sprouted Moong Raita

Green Chutney
Ingredients:
1 bunch coriander leaves
(Cilantro)
1 cup fresh grated coconut
5 green chillies
1 small onion chopped finely
½ inch piece ginger
4 flakes garlic
½ tsp cumin seeds
1 tsp sugar
a small ball of tamarind or
(1tsp lemon juice)
Salt to taste
Method:
Blend all the ingredients in a blender/grinder adding a little water if necessary.

Note:Instead of Coriander leaves we can substitute with mint leaves or a mixture of both equally. Serve fresh with dosas, idlis, upma, vadas, katchori,sandwiches etc

Sweet & Sour Chutney
Ingredients:
100 gms. dates
100 gms. tamarind
100 gms. jaggery
1 tsp. roasted cumin seeds
(jeera)
Salt to taste
Method
Soak dates, tamarind and jaggery in warm water for about 1/2 hour the blend them all with cummin and salt, adding water if necessary to get a consistency of a chutney.

Nut chutney

Ingredients:
Grinding 1 cup coconut grated
1/3 cup gram dal
1 tbsp. peanuts roasted
2 almonds
2 cashewnuts
6 green chillies
1/2 cup coriander leaves
1 tsp. salt
1/4 tsp. sugar

seasoning: 2 tsp. mustard seeds 1/4 tsp. cumin seeds 5 curry leaves finely chopped 1 pinch asafoetida

Method:
Grind all the ingredients together adding little water if necessary.

Heat oil and add mustard seeds while splutter add cumin and curry leaves and hing, stir for a minute and then pour hot oil over the chutney. Mix gently.

Serve fresh with idlis,dosas, upma, vadas, etc.

Cucumber Raita

Ingredients:
1 cup cucumber, diced in small cubes
1/2 cup cabbage finely sliced
1 cup onion, small cubes
1 1/2 cup natural yoghurt
3 Green chillies finely chopped
1/2 cup fresh cilantro finely chopped
1 green chili, finely chopped
1/2 cup grated coconut
salt to taste
Method:
Grind the coconut and then add chillies and yoghurt, blend for 1 minute

In a bowl add the blended mixture and add the cucumber, onion, cilantro and mix well. Add salt to taste. Transfer to a serving dish.

Chat Chutney

Green Chutney:
Ingredients
7 green chillies
50 gms groundnuts(fried)
2 tsp sugar
2 cup cilantro
1 Lime
salt to taste
Grind all the ingredients together adding little water.

Red Chutney
Ingredients
1 pod Garlic crushed(powder)
2 tsp Chilli powder
Salt to taste
Make it thin consistency

Sweet Chutney
Ingredients
8 dates
2 tbsp tamarind paste
1/2 tsp cummin powder
1/2 tsp coriander powder
2 tbsp sugar (jaggery)
1 tbsp chilli powder
Grind all the ingredients together adding little water.

Method:
Blend all the chutneys separately

Use these chutney to make any type of Chats, Masala Puris, or any type of snacks.

Sprouted Moon Raita
Ingredients:
1cup sprouted moong
2 Green Chillies chopped very fine
1tsp cummin powder
1 tbsp Ghee or oil
1 cup Yoghurt
1/4 cup Cilantro chopped fine
Salt to taste
Method
Melt ghee or oil in a pan, add finely chopped green chillies fry for a minute and then add sprouted moong and stir for 5 minutes, remove and cool it then add yoghurt, cummin powder, cilantro chopped and salt to taste and mix well. Serve cold.
