Mince Masala Pork Curry(Mangalorean Style) Pork Indaad Mutton Curry
Mince Masala
Ingredients:
1 kg. Mince Meat
3 onions,thinly sliced
1cup oil
1tbsp. ginger paste
1tsp. garam masala
8 whole red chilli
2tbsp. yogurt
2 tbsp. chopped cilantro
1 tsp. green chillies finely chopped
Salt to taste
Method:
Wash the mince and drain out all the water.

Heat 2tbsp oil in a heavy based sauce pan. Add 2 onions and fry for 10 minutes to a light golden color, Remove onions from oil and fry the whole chillies just for a moment. Blend both onions and whole chillies in a blender to a smooth paste without using water.

Take the minced meat in a bowl. Add onion paste, ginger paste, salt, garam masala and yogurt. Knead the mixture well and marinate overnight in the refrigerator.

Take a heavy bottomed skilled, add 1 onion, then add green chillies and fry well afterwards add the marinated mince and cover it with a tight fitting lid and let it cook for 20-25 minutes. Add water if necessary. cook for 15-20 minutes or until all excess moisture has absorbed.

Transfer to a serving dish and garnish with coriander leaves. Serve hot with chapathis, naan or parathas.

Pork Curry

Ingredients:
1kg Pork
For Grinding:
1 1/2tbsp coriander seeds
1tsp cumin seeds
10 red chillies
1/2tsp peppercorns
1 tsp mustard
½ tsp turmeric powder
8 flakes garlic
1 small tamarind (2 tbsp pulp)
2 big onions chopped
1 tsp Kuskus
5 cloves
1 inch cinnamon
For garnishing
5 green chillies slit
2 onion cubed
1 inch ginger chopped
10flakes garlic chopped
1 tbsp Vinegar
Salt to taste
Method
First extract juice of tamarind, if not pulp, then use the water for grinding

Dry fry all the grinding ingredients on medium fire and grind it well. Take a heavy bottomed pan and mix the pork with all the ground ingredients and also the garnishing ingredients, except vinegar. Let it boil on high flame. When 3/4 cooked add vinegar and salt to taste on medium heat until done. Add water only if necessary.

Pork Indaad

Ingredients:
1/2kg Pork with fat(sliced thin)
1/2kg Potatoes thin sliced
For Grinding
1 1/2tbsp coriander seeds
1/2tsp cumin seeds
3 red chillies
1 inch ginger
3 green chillies
1 tsp turmeric powder
1 big onion
1 small tamarind (1 tbsp pulp)
1 tbsp Vinegar

1 tsp sugar
Salt to taste
3tbsp oil

Method:
Grind all the ingredients to a fine paste.

Boil the pork with 2 cups of water. Then take a non stick frying pan and fry the pork with oil and in the same oil fry the potato remove them and keep aside, with the oil in the pan, fry the ground masala on medium flame, then add the pork to it and stir well then add the potatoes and the sugar make a thick gravy and serve hot.

Mutton Curry

Ingredients:
1 kg Mutton
Ingredients:
For Grinding
1/2cup grated coconut
4 cloves
2 tbsp coriander seeds
1 tsp cumin seeds
1/4 tsp methi
8 red chillies
6 peppercorns
½ tsp turmeric powder
1 pod garlic
1 tsp Kuskus
For garnishing
2 small onion finely sliced
1 cup methi leaves
4 tomatoes chopped
Salt to taste
Method:
Pressure cook the mutton with onion and salt.

Grind the above to a fine paste, take a heavy bottomed skillet and add the finely sliced onions and fry till golden brown then add methi leaves and tomatoes chopped, fry them well and add the masala and fry on a medium flame for about 10 minutes. Now add the muttonand cook for another 5 minutes. Serve hot with steamed rice.
